Of Normandy's approximately 800 varieties of apples, 25 varieties grow here, all of which are harvested by hand between October and mid-December at perfect ripeness; the apple trees of the "biscuit" variety are on average 50 years old! Normally, pears may also be used in Calvados to round off the taste - but not at Camut, which also refrains from using insecticides or pesticides: Cultivation of the apples is 100% ecological! The cider is preaged in oak barrels for ten to eleven months, after which it is double distilled in September of the year that follows the harvest - in wood-fired cauldrons, one of which has already been in operation for 75 years. No new barrels are used to prevent wood taste as far as possible: The average age of the Limousin oak barrels is therefore 50 years!
At the end, Camut supplies a calvados that has preserved the natural flavours of apples like no other, and the hearty taste and powerful aroma of which are legendary. Incidentally, probably the oldest reserves of calvados are stored at Camut - some even dating back to the previous century. Many manufacturers do not always tell the truth about the age of their products, but at Camut you can be sure that the brandies truly spent decades in the cellar (which we can also note from the fact that, by now, we receive only tiny quantities from the producer!). So if you are looking for a truly old Calvados, look no further.
